Welcome!

Welcome members, we are proud to welcome you to the very first newsletter of the Veg Club! The newsletter will cover some of this month’s events, environment and nutrition related topics and some tasty recommendations of local restaurants.
 

Restaurant Spotlight: Mana Food Bar

This Wicker Park gem offers a variety of vegan and vegetarian tapas (online delivery available).

Recipe of the week:

This week we will share a quick and easy recipe to get you started. What’s nice about this one is that you don’t have to be precise and that you can make a large amount that will keep you through the week.
 

Nutrition:

In this section we will share interesting, easy to digest, facts about nutrition. Usually, we will share a short video or an article followed by a brief summary.
Our recommendation for this week is a Crash Course
video (10 min) that explains: what our body is made of, how it processes food, what are the nutrition building blocks it needs and how it processes them.
The main takeaway: a full and healthy diet consists of the following six elements – all necessary (including fats!).


 

Health:

A great resource for the connection between health and diet is the non-profit Nutrition Facts. The website was founded by Dr. Michael Greger, the author of best seller How Not to Die.
Two quick introductory videos:
1. What inspired Dr. Greger to go into medicine and advocate for a healthy diet – video (3 min).
2. Dr. Greger on why should we care about nutrition (3 min).
This week’s video is about the leading causes of death and their connection to diet– video (55 min). Here is a 6 minute cut from that same lecture discussing cholesterol.

 

Environment:

Did you know that it takes 2,500 gallons of water to produce 1 pound of beef? Ever wondered what is the leading cause of deforestation and ocean dead zones? Perhaps one of the best resources about the link between environment and human food consumption is the movie Cowspiracy (trailer). The movie is available on Netflix.
